Prep the oven and pan: Preheat to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
Slice the zucchini: Cut into 1/4-inch thick rounds.
Aim for even slices so they cook uniformly.
Season: Arrange slices on the baking sheet. Brush or spray lightly with olive oil, then sprinkle with salt, pepper, garlic powder, and a pinch of Italian seasoning.
Pre-bake: Roast for 5–7 minutes to soften and release moisture. This prevents soggy bites.
Blot moisture: Remove from oven and gently dab the tops with a paper towel to soak up excess water.
Add sauce and cheese: Spoon a small dollop of pizza sauce onto each slice.
Top with mozzarella and a light dusting of Parmesan.
Add toppings: Place a piece or two of pepperoni on each. Add any extra toppings you like (keep pieces small).
Bake again: Return to the oven for 6–8 minutes, until cheese is melted and bubbly with light golden edges.
Finish: Broil for 1 minute if you want a toastier top. Sprinkle with fresh basil or parsley and red pepper flakes.
Serve: Let cool for 2–3 minutes.
Enjoy warm.
