Prep the strawberries: Rinse and dry thoroughly.
Keep the green tops on for a handle, or remove them and slice a tiny bit off the base so they stand upright.
Core the centers: Use a small paring knife or a strawberry huller to remove the white core and create a cavity. Don’t cut through the sides. Pat the insides dry with a paper towel so the filling sticks.
Crush the Oreos: Place cookies in a zip-top bag and crush with a rolling pin, or pulse in a food processor.
Aim for a mix of fine crumbs and small chunks for texture.
Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar, vanilla, and a pinch of salt. Beat until fluffy.
If using, blend in heavy cream or sour cream to loosen the texture slightly.
Fold in the crumbs: Stir in about 2/3 of the crushed Oreos. Save the rest for topping. Don’t overmix—you want little cookie bits throughout.
Fill the strawberries: Spoon the mixture into a piping bag with a star tip (or use a zip-top bag with the corner snipped).
Pipe the filling into each strawberry, mounding it a bit on top.
Finish with toppings: Sprinkle with the remaining Oreo crumbs. Add mini chips or a light chocolate drizzle if you like.
Chill briefly: Refrigerate for 20–30 minutes to set the filling. This helps the cheesecake firm up and the flavors meld.
Serve: Arrange on a platter and enjoy chilled.
For best texture, serve the same day.
