Ingredients

  • Protein: 1 pound ground beef or turkey (90–93% lean)
  • Taco seasoning: 2–3 tablespoons (store-bought or homemade)
  • Broth or water: 1/4 cup (to simmer with seasoning)
  • Romaine or mixed greens: 6–8 cups, chopped
  • Black beans: 1 can (15 oz), drained and rinsed
  • Corn: 1 cup (frozen and thawed, or canned and drained)
  • Tomatoes: 1–2 cups, diced (Roma or cherry)
  • Red onion: 1/4 cup, finely chopped
  • Avocado: 1 large, diced
  • Cilantro: 1/4 cup, chopped
  • Cheddar or Monterey Jack: 1 cup, shredded (optional)
  • Jalapeño: 1, thinly sliced (optional)
  • Lime: 1–2, cut into wedges
  • Greek yogurt or sour cream: For topping (optional)
  • Crunch factor (tortilla-free): 1/2 cup roasted pepitas, crushed baked chickpeas, or thinly sliced radishes
  • Olive oil: 3 tablespoons
  • Lime juice: 3 tablespoons (fresh)
  • Honey or agave: 1 teaspoon
  • Garlic: 1 small clove, minced
  • Ground cumin: 1/2 teaspoon
  • Salt and pepper: To taste

Instructions

  • Brown the protein. Heat a large skillet over medium-high. Add ground beef or turkey and cook, breaking it up, until no longer pink, about 6–8 minutes. Drain excess fat if needed.
  • Season and simmer. Sprinkle in taco seasoning and pour in broth or water. Stir and simmer 2–3 minutes until the liquid reduces and the meat is glossy and coated. Remove from heat to cool slightly.
  • Mix the dressing. In a small bowl or jar, whisk olive oil, lime juice, honey, garlic, cumin, salt, and pepper until emulsified. Taste and adjust salt and acidity.
  • Prep the veggies. Chop lettuce, dice tomatoes and avocado, mince red onion, and slice jalapeño if using. Rinse and drain black beans and corn well.
  • Build the base. Add lettuce to a large serving bowl. Scatter over black beans, corn, tomatoes, red onion, and cilantro.
  • Add protein and crunch. Spoon the warm, seasoned meat over the salad. Add avocado, cheese if using, and your crunchy elements like pepitas or radishes.
  • Dress and toss. Drizzle with the lime dressing. Toss gently to combine, or serve the dressing on the side for individual bowls.
  • Finish and serve. Top with a dollop of Greek yogurt or sour cream, extra cilantro, and lime wedges. Serve right away while the meat is slightly warm.
