Heat the pan: Set a large skillet or wok over medium-high heat. Add the avocado oil and let it get hot but not smoking.
Brown the meat: Add the ground pork (or turkey/chicken). Break it up with a spatula and cook until no longer pink, about 5–7 minutes.
Season lightly with salt and pepper. If there’s excess grease, drain it off.
Add aromatics: Stir in the onion, garlic, and ginger. Cook 2–3 minutes until fragrant and the onion softens.
Load the veggies: Add the coleslaw mix.
If using other veggies like mushrooms or bell peppers, add them now. Toss well and cook for 4–6 minutes, until the cabbage is tender-crisp. Avoid overcooking so it keeps some bite.
Season: Pour in soy sauce (or tamari), rice vinegar, sesame oil, and sriracha if using.
Toss to coat. Taste and adjust salt, pepper, and heat.
Scramble the eggs: Push everything to one side of the pan. Add a small drizzle of oil to the empty space if needed.
Pour in the beaten eggs and scramble until just set, 30–60 seconds. Fold the eggs into the mixture.
Finish and garnish: Turn off the heat. Stir in most of the green onions.
Plate and top with remaining green onions and sesame seeds.
Serve: Enjoy as is, or pair with cauliflower rice or shirataki noodles for extra volume without extra carbs.
