Ingredients

  • 4 boneless skinless chicken thighs
  • 2 lemons juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion thinly sliced
  • Feta cheese for topping
  • Fresh mint leaves for garnish
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh mint chopped

Instructions

  • In a bowl, combine lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Marinate the chicken thighs in this mixture for at least 30 minutes.

  • In a separate bowl, mix together Greek yogurt, chopped mint, minced garlic, salt, and pepper to create the Sizzled Mint Goddess Sauce.
  • Chop the cooked chicken into bite-sized pieces.
  • Assemble the bowls by placing the cooked rice or quinoa at the bottom, topped with cherry tomatoes, cucumber, red onion, chicken, and feta cheese.
  • Drizzle the Mint Goddess Sauce over the top, garnish with fresh mint leaves, and serve.
