Prep the chicken: If using full chicken breasts, slice them horizontally into thin cutlets. Pat dry with paper towels for better browning.
Set up two bowls: In one bowl, whisk the egg with coconut milk until smooth.
In a second bowl, mix shredded coconut, almond flour, garlic powder, paprika, onion powder, salt, pepper, and lime zest.
Coat the chicken: Dip each cutlet in the egg mixture, letting extra drip off. Press into the coconut mixture, coating both sides. Gently shake off excess.
Pan-sear option: Heat 2 tablespoons oil in a large nonstick skillet over medium heat.
Add cutlets in a single layer without crowding. Cook 3–4 minutes per side until golden and cooked through (internal temp 165°F/74°C). Add more oil as needed for the next batch.
Bake option: Preheat oven to 425°F (220°C).
Place breaded cutlets on a parchment-lined sheet and drizzle or mist lightly with oil. Bake 12–15 minutes, flipping once, until crisp and cooked through.
Air fryer option: Preheat to 375°F (190°C). Lightly oil the basket.
Air fry in a single layer 8–10 minutes, flipping halfway, until golden and done.
Rest and garnish: Let the chicken rest 3 minutes to keep juices in. Squeeze fresh lime over the top and sprinkle with cilantro or green onions.
Serve: Pair with a simple salad, cauliflower rice, roasted broccoli, or a quick slaw. Add a dipping sauce if you like (ideas below).
