Rinse the quinoa: Place quinoa in a fine-mesh sieve and rinse under cold water for 30 seconds. This removes the natural coating that can taste bitter.
Cook the quinoa: In a medium saucepan, combine rinsed quinoa, water (or milk), and salt.
Bring to a gentle boil, then reduce heat to low, cover, and simmer for 14–16 minutes, or until the liquid is absorbed and quinoa is fluffy.
Rest and fluff: Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
Sauté the apples: While the quinoa cooks, warm butter or coconut oil in a small skillet over medium heat. Add diced apple and half the cinnamon.
Cook for 3–5 minutes, stirring, until apples are tender with a little bite. If you like them softer, cook a minute longer.
Sweeten and spice: Stir maple syrup (or honey), remaining cinnamon, and vanilla into the quinoa. Taste and adjust sweetness or cinnamon to your liking.
Assemble the bowl: Spoon quinoa into bowls.
Top with warm sautéed apples, nuts or seeds, and a splash of milk. Add any extras like yogurt, dried fruit, or more cinnamon.
Serve warm: Drizzle a little more maple if needed and enjoy immediately while cozy and fragrant.
