Make the berry base: Add the berries to a small saucepan over medium heat.
If using frozen berries, no need to thaw. Cook 5–7 minutes, stirring occasionally, until the berries break down and release their juices.
Sweeten and brighten: Stir in the maple syrup and lemon juice. Taste and adjust sweetness—remember the oats will mellow the flavors.
Thicken with chia: Remove from heat, mash lightly with a fork, then stir in the chia seeds (and vanilla or cinnamon if using).
Let it sit 10–15 minutes to thicken into a quick jam. It will continue to set as it cools.
Mix the oats: In a jar or bowl, combine rolled oats, milk, yogurt, chia seeds, maple syrup, vanilla, and a pinch of salt. Stir well so the chia doesn’t clump.
Layer it up: Spoon a layer of berry chia jam into the bottom of two jars or bowls.
Add the oat mixture. Finish with another spoonful of jam on top. You can also swirl the jam through the oats if you prefer.
Chill overnight: Cover and refrigerate at least 4 hours, but ideally overnight, so the oats soften and the flavors meld.
Serve: In the morning, give the oats a quick stir.
Add a splash of milk if they seem too thick. Top with fresh berries, nuts, or a drizzle of nut butter for extra richness and crunch.
