Ingredients

  • Jalapeños (12 large, firm, and glossy)
  • Cream cheese (8 oz, softened)
  • Sharp cheddar cheese (1 cup shredded)
  • Scallions (2, finely sliced)
  • Garlic powder (1/2 teaspoon)
  • Smoked paprika (1/2 teaspoon)
  • Fresh lime (1/2, juiced)
  • Kosher salt and black pepper
  • Eggs (2, beaten)
  • All‑purpose flour (1/2 cup)
  • Panko breadcrumbs (1 to 1 1/2 cups)
  • Olive oil or neutral oil spray
  • Optional add‑ins: cooked crumbled bacon, chives, hot sauce, or Monterey Jack
  • Optional dips: ranch, sour cream with lime, or chipotle mayo

Instructions

  • Preheat and prep the pan. Heat the oven to 425°F (220°C). Line a sheet pan with parchment paper or foil and lightly oil it. This helps the bottoms crisp.
  • Prep the jalapeños. Wearing gloves if you have them, slice each jalapeño lengthwise. Scoop out seeds and membranes with a small spoon. For more heat, leave a few seeds behind.
  • Mix the filling. In a bowl, combine cream cheese, shredded cheddar, scallions, garlic powder, smoked paprika, lime juice, 1/2 teaspoon salt, and a few grinds of pepper. Stir until smooth.
  • Fill the peppers. Spoon the mixture into each jalapeño half, mounding slightly but keeping it level with the rim so it doesn’t spill out during baking.
  • Set up a breading station. Place flour in one shallow bowl, beaten eggs in another, and panko in a third. Season the panko with a pinch of salt and smoked paprika for extra flavor.
  • Bread the poppers. Dust each filled jalapeño lightly in flour, dip in egg, then press into panko until well coated. For extra crunch, press more panko on top of the filling.
  • Arrange and oil. Place poppers filling‑side up on the prepared pan. Lightly mist or drizzle with oil to encourage browning. Don’t drench them—just a thin coat.
  • Bake. Bake for 15–18 minutes, until the panko is golden and the cheese is melty. If needed, broil for 1–2 minutes at the end for deeper color. Watch closely to avoid burning.
  • Rest briefly. Let them cool for 5 minutes so the filling sets slightly. Finish with a sprinkle of salt or a squeeze of lime if you like.
  • Serve. Plate with your favorite dip: ranch, limey sour cream, or smoky chipotle mayo.
