Ingredients

  • Dark or semisweet chocolate (6 ounces/170 g), chopped. Aim for 55–70% cocoa for balance.
  • Heavy cream (1 1/2 cups/360 ml), cold and divided.
  • Granulated sugar (2–3 tablespoons), to taste.

Instructions

  • Prepare your chocolate. Finely chop the chocolate and place it in a heatproof bowl. Smaller pieces melt more evenly and prevent scorching.
  • Warm a portion of the cream. In a small saucepan, heat 1/2 cup (120 ml) of the cream until it’s steaming but not boiling. You should see small bubbles around the edges.
  • Make a quick ganache. Pour the hot cream over the chopped chocolate. Let it sit for 1–2 minutes, then stir gently from the center outward until smooth and glossy. If the chocolate doesn’t fully melt, place the bowl over a pan of barely simmering water and stir until silky.
  • Sweeten and flavor. Stir in the sugar to taste while the ganache is warm so it dissolves. If using, add a pinch of salt and vanilla. Let the ganache cool to room temperature. This step matters—the cooler it is, the better it will fold into the whipped cream.
  • Whip the remaining cream. In a chilled mixing bowl, whip the remaining 1 cup (240 ml) of cold heavy cream to soft peaks. The cream should hold its shape but the peak should curl over when you lift the whisk.
  • Lighten the ganache. Add a generous spoonful of whipped cream to the ganache and stir to loosen it. This makes folding easier and helps maintain volume.
  • Fold gently. Add the rest of the whipped cream in two or three additions. Use a spatula to fold, turning the bowl as you go. Stop as soon as the mixture looks even and streak-free. Overmixing deflates the mousse.
  • Portion and chill. Spoon the mousse into small glasses, ramekins, or a single serving bowl. Cover and chill at least 1–2 hours, or until set and airy. It will firm up more as it sits.
  • Serve. Top with shaved chocolate, cocoa powder, fresh berries, or a dollop of cream. Keep it simple or dress it up—your call.
